E2 Family Delta Classic Cabernet Sauvignon |
Tasting Note :
2003 gave a harvest of smaller tonnage with remarkable quality Cabernets. After harvest the fruit was hand-sorted and crushed for fermentation into stainless steel tanks. Fermentation was 14 days and the cabernet was then transferred to the barrels. Over the next 4 years it was racked off 5 times, annually. When we bottled in late March, we felt the wine was so superb we almost decided not to blend in any other wine. But the winemakers decided to intensify the middle with our sangiovese by adding a touch of Sangiovese and deepen the color more with a minute amount of Petite Syrah, which brought the wine to perfection.
